Over 25 years ago, Caroline and Tim Wilson were tasked with the organic conversion of Adeys Farm – 600 acres of unspoiled, traditional grassland in the Severn Valley. Nowadays, Tim, now joined by son Albert, devote themselves to rearing traditional breed cattle, sheep and pigs in a way that respects both animals and the land, resulting in exceptional meat of the highest quality and flavour. The land was entrusted to Caroline and Tim by the Ernest Cook Trust – an outdoor learning charity – and the farm regularly hosts residential camps and school visits for young people.
Mission and values: Allowing animals to lead as natural and stress-free a life as possible is at the heart of Adeys’ way of farming. Notably, all the animals are weaned late, ensuring young are well-nurtured, and they’re given plenty of space to express natural behaviours. Grazing animals feed on permanent pasture and clover leys, supplemented with hay, silage and farm-grown grains in inclement weather. Another integral aspect of Adeys’ supply chain is the use of a small, family-run abattoir just 6 miles from the farm, which means minimum transport time for the animals and a calm processing environment.
