Firmly rooted in the local landscape, but with a reputation that stretches a long way from their Forest of Dean location, Severn & Wye Smokery use traditional techniques, filleting, curing and cutting mostly by hand, and cutting their own oak chips to give their fish a distinctive flavour.
The salmon we source from Severn & Wye is farmed by Glenarm Organic Salmon. As the only salmon producer in the Irish Sea, they stand out from their Scottish counterparts not only in the exceptional quality of their salmon, but also in the unparalleled stewardship of their two off-shore organic certified farms.
