Chocolate and Beetroot Pancakes with Chopped Dates

Chocolate and Beetroot Pancakes with Chopped Dates
Serves: 4 Time: 10 minutes Level: Easy
Ingredients
- 3 small cooked beetroot, chopped
50ml milk
200g of self-raising flour
1tsp of baking powder
2 tbsp of maple syrup
½ tsp of vanilla extract
3 eggs
25g butter, melted – extra for frying
- Toppings
- Chopped Medjool dates
Yoghurt
Method
Place the cooked beetroot and the milk into a blender and blitz until smooth. Add into a mixing bowl along with the other pancake ingredients and whisk until smooth and purple.
Drop a small knob of butter into a saucepan and heat on a medium flame until melted and bubbly. Using a ladle add enough mixture to thinly cover the base of the pan. Cook for 2-3 mins before flipping and cooking for a further minute.
Serve with fresh chopped Medjool dates and a tablespoon of yoghurt.
