Founded by Giovanni Carleschi, Pastificio set out to create a premium quality dry pasta from British stoneground spelt and other ancient grains. 6 years of experimenting and refining has produced this beautiful, rich and flavoursome pasta. Pastificio use three types of ancient grain, spelt, emmer and einkorn.
Thousands of years of history come with each grain. And thanks to the work of artisan producers, we’re rediscovering their rich, diverse flavour.
