DORSET APPLE CAKE
Sweet, dense and full of appley flavours. We’re all about this delicious apple cake!
We have a range of tantalising apples, grown by our longstanding supplier Joe Pardoe over on his farm in Herefordshire and this cake recipe is one of our favourite ways to enjoy delicious organic apples right now.
DORSET APPLE CAKE
Serves: 6
Ingredients
225g butter, softened, plus extra for the tin
450g cooking apples, peeled, cored and sliced
1/2 lemon, juiced
280g golden caster sugar
4 eggs
2 tsp vanilla extract
350g self-raising flour
2 tsp baking powder
1 tbsp demerara sugar, to sprinkle
Method
Preheat the oven to gas 4/180C. Line a baking tin with baking parchment and butter. Squeeze lemon juice over the apples and set to one side.
Add the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix until smooth. Spread half the mixture into the tin, arrange half the apple over the top of the mixture, and repeat. Sprinkle demerara sugar.
Bake the cake for 40-45 mins, or until golden and crisp on top and a skewer comes out clean. Serve up with delicious ice cream or warm with a cosy cup of tea.
