Tuna and Green Bean Orzo Salad

Ingredients:
Serves 4
½ red onion, diced
½ lemon
Salt
150g green beans
120g orzo
½ jar Organico roasted red peppers
Handful of black olives
1 can Fish4Ever tuna
Olive oil
Salt and pepper to season
Method:
Put the diced red onion into a small bowl, and squeeze over some lemon juice followed by a few cracks of salt. Mix and squeeze the red onion pieces with the lemon and salt and put this to one side to do its pickling magic.
Chop the green beans into bite size pieces and simmer them in salted water for about 4 minutes, or until they’re softened. Using a slotted spoon, scoop out the green beans into a bowl. Use the water that you cooked your beans in to cook your orzo according to the instructions on the pack.
Roughly chop the roasted peppers and olives (or remove the stones if you made the same mistake as we did!).
Combine all of the ingredients into a large bowl and toss it together with a big glug of extra virgin olive oil, salt, pepper and a squeeze of lemon juice.
