Green Shakshuka
Green shakshuka is the seasonal dish you need in your life right now. Full of nutritious ingredients – the best part is it’s easy, simple and lip-lickingly good.
GREEN SHAKSHUKA
Serves: 4
Ingredients
3 tbsp olive oil
2 leeks, chopped up finely
200g spinach
250g frozen peas
2 garlic cloves, crushed and diced
1 tbsp cumin seeds
handful parsley, roughly chopped
handful of coriander, roughly chopped
handful of mint, roughly chopped
8 medium eggs
150g yoghurt
1 tbsp harissa
To serve:
Flatbread or crusty sourdough
Method
Into a wide, shallow frying pan, heat the oil over a medium flame. Add the leeks, along with a pinch of salt and cook for 4 mins or until softened. Next, add the spinach, stirring until wilted.
Add the peas, garlic, cumin, herbs and some seasoning. Cook for a few mins, until the mix smells fragrant. With a spoon, create four gaps and crack two eggs into each gap. Cover the shakshuka with a lid and cook for 10 mins, or until the whites set but the yolks are runny.
Season the eggs with salt, layer the yoghurt and harissa on top, and scatter over the a few of the mint leaves. Serve up with flatbread or sourdough for a yummy Sunday dish!
