VEGAN CAULIFLOWER AND JACKFRUIT WRAPS
We love simple fajitas. Beautiful flavours and textures packed into one delicious wrap. And this recipe for cauliflower and jackfruit wraps is plant-based too!
VEGAN CAULIFLOWER & JACKFRUIT WRAPS
Serves: 4
Ingredients
2 tins of jackfruit, drained
2 tbsp olive oil
1 onion, diced
2 cloves of garlic, minced
1 chilli, finely chopped
400g black beans, drained
1 head of cauliflower, chopped into florets
1 tsp smoked paprika
170ml barbecue sauce
2 tsp ground cumin
Handful of torn fresh coriander
Juice of half a lime
To serve:
Half a cabbage, shredded
Vegan yoghurt
Fajita wraps
Vegan cheese (optional)
Method
Begin by shredding the jackfruit in a bowl with a fork or your hands.
Using a large-bottomed saucepan, heat up the olive oil and add the onion. Fry for 5 mins. Add the jackfruit, garlic and chilli and continue to cook for a further 5 mins.
Next, add the rest of the ingredients, give everything a good stir and pop a lid on top. Leave the pan to simmer for 5 mins on a low heat.
Once the cauliflower has softened, remove from the heat and serve up onto the fajitas, along with the cabbage and yoghurt and optional grated cheese.
