Kale and wild garlic gnocchi

Kale and wild garlic gnocchi
Serves: 4
INGREDIENTS
500g gnocchi
1 tbsp olive oil
1 onion, diced
200g of kale
1 clove garlic
200g kale
1 lemon, juice
100g grated vegan cheese
METHOD
Begin by heating a large saucepan of water until boiling. Add the gnocchi, and boil for 2-3 mins. Remove the gnocchi from the pan and drain the water. Set to one side.
Next, heat the olive oil in a frying pan and add the onion, frying for 3 mins or so. Pop the crushed garlic clove and gnocchi into the pan and cook until the gnocchi starts to brown. Follow this with the kale and lemon juice, cooking for a further 3 mins.
Once the kale has softened, remove from the pan and serve up with a good sprinkling of vegan cheese.
