Vegan Cauliflower and Cream Cheese Salad
Easy to rustle up and celebrating cauliflower at its finest, give this recipe a go!
Vegan Cauliflower and cream cheese salad
Serves: 3
INGREDIENTS
1 head of cauliflower, chopped into 1cm chunks
1 tbsp olive oil
1 tbsp maple syrup
Seasoning
100g pine nuts
250g spinach
1 lemon, juiced
150g vegan cream cheese
METHOD
-Preheat the oven to gas mark /190C. Lay the cauliflower pieces onto a tray, drizzle over the oil and maple syrup and season well. Pop the tray into the oven and cook the cauliflower until golden and soft when pierced with a knife.
-Once the cauliflower is cooked, switch the oven over to the grill on a medium heat. Swap the cauliflower out for the pine nuts, grilling them for around 5 mins, or until toasted.
-Into a large mixing bowl, add the spinach leaves and lemon juice. Stir through well, before adding the cauliflower and pine nuts.
-Serve up with the cream cheese on top of each bowl and enjoy this seasonal delight.
