Kohlrabi noodle soup
Have you tried kohlrabi before? This delicious, nutty relative of cabbage lends itself so well to this noodle dish!

KOHLRABI NOODLE Soup
Serves: 3
Ingredients
50g french beans, chopped into small chunks
50g kohlrabi, chopped into 2cm pieces
2cm piece of root ginger, grated
1 veg stock cube, dissolved into 500ml hot water
1/4 head of cabbage, thinly sliced
1 block of noodles
2 tbsp soy sauce
1/2 lime, juice
1 tbsp sesame oil
Seasoning
Method
Into a large steamer, pop the French beans and kohlrabi, filling the bottom with 150ml of water and steaming the veg until tender. Leave the water in the bottom pan and set to one side.
Next, in a frying pan, fry off the onion, pepper ginger and garlic for 8 mins, until golden and tender.
Pop the cabbage into the steamer pan water and return it to the heat with the veg stock water. Lower the flame to a simmer and cook the cabbage for 1 min, before adding the steamed veg, fried veg and the rest of the ingredients.
Serve up the noodle soup once the cabbage has cooked and enjoy.
