Tofu Skewers
Give this meatless recipe a go on the BBQ! Perfect vegan-friendly fodder for a delicious summer feast.
Tofu Skewers
Serves: 4
INGREDIENTS
240ml water
5 tbsp Better Food marmalade
6 tbsp BBQ sauce
2 tbsp olive oil
4 cloves of garlic, crushed and diced
2 tbsp chilli sauce
2 tbsp black pepper
800g tofu
2 onions, cut into quarters
1 courgette, cut into 2cm rounds
1 pepper, cut into eighths
METHOD
Soak the skewers in water to prevent them from burning.
Place the tofu onto a plate with paper towels, and then lay a couple of paper towels on top. Pop a weight on top and press down, before leaving the weight to squeeze out any excess water for 30 mins.
Mix together the water, marmalade, BBQ sauce, oil, garlic, chilli sauce and black pepper to create a marinade.
Remove the weight and paper from the tofu and slice into 12 chunks. Place the chunks into the marinade bowl and refrigerate for an hour.
Remove the tofu pieces from the marinade after the hour is up and set to one side. Heat a saucepan on a medium flame and add the marinade. Cook for 10 mins, or until it starts to thicken.
Taking the skewers, arrange the veg and tofu in an alternating pattern. Brush the marinade over the skewers before adding them to the grill or BBQ. Cook for 3-4 mins on each side.
Once cooked, serve up with a summery salad, flatbreads and any other delicious BBQ fare!
