FEEDS FOUR FOR UNDER £7: VEGAN CAESAR SALAD

We’re looking at organic recipe ideas you can use to feed up to four people, or batch cook for yourself for under £7.
Today’s tasty dish is a vegan Caesar salad. The roasted chickpeas are transformed into the perfect chicken replacement in this delicious lunchtime snack.
ORGANIC MEALS FOR UNDER £7: VEGAN CAESAR SALAD
Serves: 4
INGREDIENTS
400g chickpeas – £1.29
1 tsp paprika – 50p
1 tbsp olive oil – 31p
250g kale – 71p
For the dressing:
2 garlic cloves –
60g vegan yoghurt – 23p
1 lemon, zest and juice – 85p
1 tsp paprika
1 tsp oregano – 35p
METHOD
Place chickpeas on a prepared baking sheet, scatter the paprika, drizzle with oil and toss to coat. Arrange chickpeas in a single layer, and garlic cloves (from the dressing). Bake for 40 – 45 minutes, stirring every 10 minutes, or so – and remove the garlic if they seem to be getting too baked (especially if they are on the smaller side). Once done, set the chickpeas to one side.
For the dressing, combine the ingredients, along with the cooked garlic, in a large bowl.
Serve up the shredded kale leaves with the chickpeas scattered on top and, taking a spoon, drizzle the dressing over the dish. Enjoy!
